I made these on Thanksgiving and they came out soo good, and I don't even like pumpkin pie!
Ingredients:
(1)15oz pumpkin purée
1/2 cup of sugar
1/4 cup brown sugar
(2) large eggs
(1) teaspoon vanilla extract
3/4 cup evaporated milk
2/3 cup all purpose flour
(2) teaspoons pumpkin pie spice
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon baking powder
Directions:
*Preheat oven to 350 degrees
*Line muffin tin with silicone or foil liners, or you can spray it with cooking spray. Don't use the paper liners because they stick pretty bad and are hard to get off the pumpkin pie. (Trust me I did and it sucked!)
*Mix the pumpkin, sugar, brown sugar, eggs and evaporated milk.
*Add the flour,pumpkin spice, salt, baking soda and baking powder to the mixture
*Fill each muffin cup with 1/3 cup of the mixture
*Bake for 20 minutes
*Let them cool
*Remove cupcakes and chill in the fridge for about 30 mins
*top with whip cream and more pumpkin spice
(I did the last part right before I served them or wanted to eat one)
